Salam Alaikum
Beef stew is always easy. Just throw in  your stew meat, veggies, maybe some broth or bullion, barley (i love this), spices, set on low for eight hours or so.
I recommend trying a search at www.recipezaar.com or www.allrecipes.com. I use these sites alot and you can read other peoples reviews and make changes accordingly.

Here's a couple that i make:
http://www.recipezaar.com/Crock-Pot-Stiffado-17181 (u can use a spash of reg vinegar instead of the red wine vinegar)

these are on my list to try:

Dried beans also cook well in the crockpot. Just throw em in there with some broth, seasoning, meat of choice, cook for like 8 hours and voila. I never presoak when i cook them in the crockpot.

Good luck and happy cooking
