    Welcome to Madinat Al-Muslimeen, the City of the Muslims. Non-muslims are also of course quite welcome to share their comments. If this is your first time here, you need to register with the city council. Once you register you have 15 days to post your mandatory introduction and then you will be upgraded to a Madina Citizen, God Willing. Here's a recipe for roti which is simialr to the one i make except that i do not use baking powder (rising agent) or sugar when i make rotis.




Roti made with butter
INGREDIENTS

4 cups flour

3 tsp baking powder

1 tsp salt

1 tsp sugar

60g butter

1½ cups hot water

extra flour for dusting

60g melted butter for basting

METHOD

1) Sift dry ingredients into a mixing bowl

2) Rub in the butter

3) Stir in water to make a soft dough

4) Knead well and divide into 2 portions

5) Roll out each portion on a floured surface to 1cm thickness

6) Brush lightly with butter

7) Fold the dough into broad strips

Cool Cut 4 pieces from each strip

9) Roll out into rotis and toast on a moderately hot griddle while basting until cooked on both sides.
