Here's a recipe for roti which is simialr to the one i make except that i do not use baking powder (rising agent) or sugar when i make rotis.

Roti made with butter

4 cups flour

3 tsp baking powder

1 tsp salt

1 tsp sugar

60g butter

1½ cups hot water

extra flour for dusting

60g melted butter for basting


1) Sift dry ingredients into a mixing bowl

2) Rub in the butter

3) Stir in water to make a soft dough

4) Knead well and divide into 2 portions

5) Roll out each portion on a floured surface to 1cm thickness

6) Brush lightly with butter

7) Fold the dough into broad strips

Cool Cut 4 pieces from each strip

9) Roll out into rotis and toast on a moderately hot griddle while basting until cooked on both sides.
