One another board a non-muslim woman asked about this. This is something that has sometimes bothered me as well. However, as a believer, I can accept something from the Quran even if I don't necessarily "like it".
Also, in reading the verse, it appears that it is referring to financial transactions. So why then is this often applied to broader areas?
Any advise on how to approach this would be greatly appreciated.

there is an interpretation which instead of making women look like losers makes men look like the losers. 

it goes as: since men like to beat up people and intimidate others, and since women didn't do such nasty stuff, two women were deemed prudent in cases where intimidation was likely to be most sever -- in financial stuff.   One woman might be easily intimidated, threatened, etc..  But unless you are a big time criminal dude, doing it to multiple women would be much harder.  In fact it would probably be exponentially harder.

So: the 2 women thing in financial stuff can be interpreted as a counterbalance to the brutish behaviour of folks like me Smiley

anyhow....
