Ingredients

1 red pepper
2-3 cloves garlic
Fresh rosemary, about 4 inches
1 lb sausage
1 small pint heavy cream
Parmesan cheese
1 jar pasta sauce
1 box penne or similar pasta
Olive oil

Method

Cook sausage on medium until cooked through. While cooking, chop sausage into small pieces. Place in a bowl with paper towels to drain. Cook pasta until just done. Cut red pepper into 1/2 inch dice. Smash and peel 2-3 garlic cloves then chop into small pieces. Heat a little olive oil in a frying pan. Add garlic and fry one minute. Add red pepper and cook slightly, just until color turns dark red, about 1 minute. Add sausage and stir one minute, then add jar of pasta sauce. Add about 1/4 cup of cream or until mixture just turns pink. Wash rosemary and cut into small pieces, add and stir. Grate a handful of Parmesan cheese into pan and stir. Fill a small bowl with pasta and top with a generous portion of sauce. Grate some Parmesan cheese over bowl for garnish.
