Here is my cousin's recipe of an Afghani dish, I believe its called Aush.
• 15 oz. tomato sauce
• 1/2 can kidney beans
• 1/2 can chick peas
• 1/2 box of frozen spinach
• 1 large potato , skinned and cubed
• Salt to taste
• Pepper to taste
• 1 tsp oil
• 1 cup yogurt
• 4 cloves minced garlic
• Fresh cilantro
• 225 g of spaghetti
In a large pot, add tomato sauce, salt, pepper and oil. Cook for about 1-
2 minutes. Next add, 3-4 cups of water and bring to a boil. Add the spaghetti,
spinach and potatoes into the tomato mixture . When everything
is almost cooked, add the beans then cook for a few more minutes.
In a separate bowl mix the yoghurt and garlic together.
Pour the soup into bowls and put a few spoons of yoghurt in the centre.
Garnish with cilantro sprigs.
